Barbara Damrosch: Beauty and Bounty in a Cook’s

How do you get people to eat better? It's all about
seduction. If grown well, vegetables and fruits are
nutritious, delicious and beautiful all at the same
time. Learn how a kitchen garden can be a feast for
the eyes as well as the stomach, and how the gorgeous
harvest continues all year long at our Four Season Farm
in Maine.
Barbara has worked professionally in the field of horticulture
since 1977, writing, consulting and lecturing on gardening,
farming and landscaping. She has authored The Garden
Primer and Theme Gardens, and writes a weekly column
for The Washington Post. Her television work includes
The Victory Garden on PBS and Gardening Naturally on
TLC. She is co-owner, with her husband Eliot Coleman,
of Four Season Farm, an experimental market garden in
Harborside, Maine, which produces vegetables year-round,
and has become a nationally recognized model of small-scale
sustainable agriculture.

Eliot

Eliot, also known as the Guru of the Garden, explores
the how-to's of organic agriculture, by relating stories
of his contacts with the early pioneers and discusses
how a plant-positive as opposed to a pest-negative philosophy
of agriculture has resonance throughout the whole human
interface with the natural world.
Nationally renowned organic farmer, Eliot Coleman has
nearly 40 years of experience in all aspects of organic
farming. He is the author of The New Organic Grower,
Four Season Harvest and the Winter Harvest Manual. He
served for two years as the Executive Director of the
International Federation of Organic Agriculture Movements
and was an advisor to the US Department of Agriculture
during their landmark 1979-80 study. He has conducted
study tours in Europe and has successfully combined
European ideas with his own to develop and popularize
a complete system of tools and equipment for organic
growers. He and wife Barbara presently operate a commercial
year-round market garden, in addition to horticultural
research projects, at Four Season Farm in Harborside,
Maine.

Jerome, one of the foremost permaculture practitioners
in the United States, is the founder and director of
the Central Rocky Mountain Permaculture Institute. The
institute began as a successful commercial market garden
and has flowered into a biologically rich “forest
garden,” that achieves the permaculture goal of
agricultural production in the least space with minimal
labor. For twenty-one years, his site has served as
a classroom for permaculture students from around the
world, though Jerome’s influence extends far beyond
the boundaries of his homestead.

Wilcox: Natural Foods & Organic Foods; What is the

Chef Kendra Wilcox will discuss farming methods for
pest prevention, crop yield, price from farmer to consumer,
food distribution, the importance of buying local seasonal

your health.
Dava has dabbled in a variety of professions, but finds
that being a chef is her true calling. She enjoys cooking
with the freshest, most nutrient rich ingredients and
has a knack for creating healthy, mouth watering dishes.
As a former restaurant owner, renowned chef and friend
to a number of local farmers, she has made quite a name
for herself and has most recently helped create a company
called Fresh and Wyld whose vision is to make local
and organically sourced foods available to valley residents.
Dava leads organic cooking workshops and tasting classes,
in addition to creating excellent cuisine and running
a successful organic produce company.

Clark grew up in Sister Bay, Wisconsin and moved to
Snowmass Village in 2001. He graduated from with an
Associate degree in Culinary Arts from Fox Valley Technical

knowledge. He was fortunate to hold the title of Sous
Chef at the famous Hotel Jerome, where he perfected
his skills. After leaving the Hotel Jerome, Clark had
a vision to start his own catering company and, just
this year, Garnish Café & Catering was created.

Join Kelly and Beth [Danowsky] for an invigorating aerobic/anaerobic
morning workout on the trails of Snowmass. They will be
combining body weight strength exercise with cardio intervals
to bring up heart rate and start your day off right. Wear
sneakers and bring a wattle bottle.
Kelly is a Registered Dietitian with a BS in Food and
Science and Human Nutrition from Iowa State University.
She is presently completing a Masters of Science Degree
in Nutrition and Physical Performance at Saint Louis University
where she is researching the anti-inflammatory effects
of omega-3 fatty acids. Kelly is the Dietitian and a personal
trainer at Wellbridge Athletic Club where she also teaches
boot camp and Spinning® classes. She provides private
counseling at Sports Enhancement Group working with athletes
offering nutritional instruction in sports-specific training,
events, and competitions.

David, Yahoo’s Mind-Body Expert, is the co-founder

Simon is an effervescent student of Vinyasa Flow. Born
in rural Korea, an image of a natural warrior came to
him as a small child, and has since guided his life.
At age 5, Simon moved to the U.S. and quickly assimilated
to American culture, but his warrior spirit was not
ignited until meeting Shiva Rea in 1995. This meeting
began his worldwide study of Ashtanga, Iyengar, Vinyasa,
and Asian martial arts.
